Milk temperature is one of the most important factors in this process. If milk temperature is below 40 ° C, the fermentation time will exceed 12 hours. Ideally, keep the temperature close to 46ºC (maximum), both when adding the yeast and during fermentation; hence the importance of using the TopTherm Yogurt Maker, which is guaranteed to maintain the ideal temperature. If milk temperature exceeds 46 ° C the live lactobacilli of the TopFit yeast will not survive and therefore, there will be no fermentation. Antibiotic in Milk - if the milk used (A, B, C or UHT) comes from cows that are undergoing antibiotic treatment for some reason, the antibiotics will inhibit the activity of live lactobacilli, and therefore there will be no fermentation.
As in the case above, yogurt density may vary according to milk composition. For a thicker texture, use 3 tablespoons of powdered milk per quart of milk.
